Recipe of the Day by Food Network, Healthy Recipes "Cucumber Salad".

Hey, it's me the Health Nut bringing you some of my favorite healthy recipes! Over the years I've accumulated so many great healthy recipes in my "Recipe Box" online. I always have a recipe of the day. I find recipes all over the Internet on websites that I frequent such as the fabulous Food Network & Heather Christo. I usually will not recommend a recipe unless I've personally tried it. This way I can give you a much better review of the recipe. 

Each week I will have a healthy recipe of the day. You can start your very own virtual recipe box! I want to show you that eating healthy can really taste good. I have over the years met many people that think eating healthy means they have to eat as they state "cardboard or bland food". I used to feel that way before I started eating healthy. You can make anything delicious with the right seasonings, sauces, etc.

Directions:

Toss 3 peeled and thinly sliced cucumbers with 1 tablespoon salt in a bowl. Chill 1 hour, then drain and pat dry. This is definitely one step in the recipe that is essential. Meanwhile, soak 3 tablespoons minced onion in cold water 15 minutes; drain. Mix 1 1/2 cups sour cream (I substitute plain yogurt for the sour cream) and 1 1/2 teaspoons sugar in a large bowl, then stir in the cucumbers, onion, some black pepper and 1/2 cup of chopped pickled cherry peppers.
Hey, I love to substitute healthy ingredients anywhere I can in any recipe. Over the years I've learned so many great substitutions. In this recipe it's the plain yogurt instead of the sour cream in the recipe. I know some of you are saying yogurt doesn't sound good compared to sour cream but I season the plain yogurt with my favorite spices and flavors like Garlic, Chipolte & Onion powder to name a few.

This great salad is a compliment to any luncheon with your friends or family. Try it this weekend and you'll love it. You can try this with your favorite mini hummus sandwiches! Now that you have a couple of ideas for a quick luncheon try serving some smoothies it will bring some color to your luncheon spread! That's it simple, right? In fact, there are all kinds of different types of cucumber salads.
